This delicious grilled chicken and mushroom flatbread is one of our family favourites and has turned into a movie night tradition. We’ve tried many recipes over the years and settled on this thin crispy crust as our go-to recipe. Making your own crust is super easy when you have a stand mixer.
My trusty KitchenAid Classic Stand Mixer is pushing 20 years old (touch wood) and is a great work-horse! Just dump your ingredients in and turn it on and let the machine do the work! Our toppings vary depending on what’s in the house but often include ham or bacon and sometimes shrimp!
Here, we topped our flatbread with char-grilled chicken, mushrooms, red onion and tomatoes! Get creative!
This quick and easy dinner idea can also be served as an appetizer. We’ll serve this with a delicious salad to round out our meal!
3 cups all-purpose flour
1 teaspoon sea salt
1 large egg
2 TBSP extra virgin olive oil
2/3 cup tepid water
(additional water may be needed)
1 grilled chicken breast, sliced
4 – 5 cremini mushrooms, sliced
2 cups shredded mozzarella cheese
1/2 TBSP Italian dried herbs
1 – 2 TBSP extra virgin olive oil
Whisk together the egg, water and olive oil, set aside. Measure flour and salt into your mixing bowl and attached to your mixer. Insert your dough hook.
On low speed, gradually add in the water. Let mix for 1 minute. Add additional water if the dough doesn’t come together in a ball. If your dough is too wet and sticky, add additional flour 1 TBSP at a time.
Once the dough is completely mixed and no longer sticking to the bowl, remove it from the mixer and place it in a clean bowl and cover. Let it rest 30 minutes.
Place oven rack in the middle of the oven and preheat to 550F. Divide dough in half and set half aside. On a well-floured surface, roll out the dough until it is about 1/8″ thick. We never worry about having a perfect circle. Place the dough on a cookie sheet lined with parchment paper for easy clean-up!
Brush your crust with olive oil and sprinkle with Italian herbs. Sprinkle 1/2 cup cheese over top of the Italian herbs followed by half of your other toppings. Finish with another 1/2 cup shredded cheese. Repeat with the second ball of dough.
You can bake your flatbread one at a time or if they fit, both at the same time. Set a timer for 16 minutes and check your flatbread for doneness. You can turn your broiler on for a minute to brown up your top if you like. Just don’t walk away. It’s amazing how you can go from golden to burnt in a very short time!
Once done, remove the pan from the oven and allow to cool for a couple of minutes before cutting!
